Ground Venison Casserole

  • 1 medium onion, finely chopped
  • 1 tablespoon canola oil
  • 1 pound ground venison
  • 2 ¼ cups cooked rice (¾ cup raw rice)
  • 1 large can tomatoes (2 ½ cups)
  • 3 tablespoons soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon curry powder
  • 1 teaspoon onion salt
  • 1/8 teaspoon pepper
  • 3 strips bacon


Brown ground venison and onion in one tablespoon oil. Mix with cooked rice, tomatoes, and seasonings. Place in 1 ½ quart casserole and top with bacon. Bake at 375 degrees until bacon is crisp (about 30 minutes). Serves six.
